4 c. dry pasta - cooked
1 tomato diced
1 red pepper diced
1 yellow or green pepper diced
1 bunch green onion sliced
1 c. sliced pepperoni
3 Tbsp apple cider vinegar
1 c. cubed cheese (or bocconcini)
Mediterranean Dream Sauce made
1.5 c. water
1 c white wine
Cook Pasta according to package directions.
Follow instructions for making the Mediterranean Dream Sauce omitting the final addition of milk. Allow to cool before adding to the salad ingredients.
Chop all of the vegetables, cheese and pepperoni.
Drain and cool pasta, fold in prepared vegetables, cheese and pepperoni.
Stir in cooled Mediterranean Dream sauce.
